Leave out for 20 minutes till they reach room temperature then oil both sides and rub in. Season with loads of salt and pepper then fry over a dry griddle on high heat for how you like them. Looking at them I’d give them 3 and a half minutes each side for a medium

Possibly 3 minutes, it’s hard to make out thickness

Once worked for a butcher and every time i called in shop if boss was out he proper looked after me . Once gave me tw o fillets and thwy were that thick I had to put em back in pan 3 times just wouldn't die. Charged me 4 quid lol
 
Olive oil. Ground sea salt n black better. Diced fresh garlic. Fry in very hot pan. Dont drop heat. Little bit of butter in pan to cool it a bit if needed

That was Scottish beef . Why it was a bit fatty lol @stuart23 .
I like to go butchers but cost me 14 quid other day and was half size of them from tesco
