You really need less pearmable render. Unless you want to put new lime render every couple of years. Bagged cement render, preferably with mesh is ok, or some silicone/silicate render. There is no quick fix. Condensation should stop forming once someone lives and use heating.

On a funny side, put another wythe of exposed bricks. Would look nice if you can work it out.

You have to write a spec. People lean towards modern materials nowdays. Cork, hemp, lime renders all can be used. Some posts mentioned it before. It can be rendered different thickness. Someone has to calculate (building physics) how much thicknes to prevent cold bridge on cavity wall. 3-5cm...

Good insulating render with low U value is very expensive to buy and install. Couple centimeters thick. In cases where insulation cant be installed on outer side of wall.

Depend if you go for insulation or just a finish. Insulation will create added thermal comfort, and take a bit of room.

@Do_It _With_Dave Hats off for trying. By the time you apply couple of layers, hack off a couple of layers, it will become expensive and dusty. Cement/sand can be brittle, may need certain conditions while drying. Plus it takes long time to set fully. Cement/sand/lime mix is more forgiving, and...

Typically, yes. But the way you describe it, the scope of works, would require many stages, many repeat visits, where plasterer would do a few hours a day... So you are better of do it in stages, see how it goes. Presuming you can vacate that space while ongoing work.
