Can I varnish on a fresh skim coat?

A lady has asked if we are able to varnish onto a freshly plastered ceiling. Is this possible? If so which varnish would I use? The lady likes the colour.

Shellac varnish was popular in the 90s

Had a customer who liked the colour also. They just took a sample of finished skim and colour matched it at a paint place.
