cos you cant buy powdered lemon

its a plastisizer nakes it spread more easily in the old days they used putty lime which used to take months to make in pits a very strong gypsum plaster was gauged in .you have to be very carefull with lime it doesnt stick to all substrates

Lime isnt normaly added to plaster, hydrated lime ime talking about normaly added to S.C render, lime putty is a different kettle of fish.
