Restaurant wood panel walls

I rent a restaurant that was newly refurbished in 2022. The previous owner chose to put laminate flooring on the drywall as accent walls. The building is an old pier and beam raised building in Galveston County, TX. Very humid!
Within the last 6 months, specific areas of the wood paneling have started to warp and blister. We removed some to see what was going on and found that there is mold on the drywall underneath the panels. This seems to be really bad anywhere an AC vent blows directly onto the wood panels.
My questions are:
1. Why is this happening?
2. Is this a landlord responsibility to fix?
3. Should this type of laminate floor be mounted to the wall?
4. Will it continue to happen no matter what I do.
