French renovation

Hi, we have been renovating our home in France, getting on well upstairs but on the ground floor the stone work, (600mm rough stone with mud joints) I am at the point where the walls need replastering. They need to breath, I am happy working with lime mortar, does anybody have a wonder recipe for this render/finish, I have done rendering with cement in the UK but know this is not suitable as a breathable coat. Supplies here are limited! Many thanks for any thoughts.

Hi Stewie, thank you for your reply, are you recommending using gurkins? They're good with burgers and salads, but how do you apply them to walls?
