Need second opinion on what to reinstate the plaster using on solid brick and lath stud walls in Hull

We're living with a back to brick and lath hall, stairs and landing and have been advised by our current plasterer to dot and dab plasterboard and it will be fine! The will be no problems with cold bridging or breathability he said. It had blown and cracked lime plaster before amongst other things.

I'd appreciate a second opinion or two, now we are back to brick as I've hired this guy based on his confidence in doing the job and prior pictures but really am not sure if we should be doing a traditional s+c and skim, or whether we could maybe batten out and insulate the coldest external walls? Gap between stair string and brick is 25mm so a problem. Would probably need a new faux string building if batterned out.

Anyone with the skills? It's freezing here currently! We're in Hull.

do you know if your property is single skin brickwork otherwise dabbing the external walls are a no no
 
Personally, first off I'd have them old lathes off before boarding.
You don't say if there's a cavity on the external walls or not. If not, battern and insulated board would be better than D&D, much better. Internal walls as long as there's no issues with damp will be ok to D&D.

No chance on stair wall
 
@MamaELK Ain’t no plasterers in your area do lime plastering ,them laths look great in lime again
Is there cavity on the externals walls ?if not that have to be lime aswell warmer job alround
 
Laths off and board ceiling. Hardwall stairs. Batten and insulated board on externals, then decide what you wanna do on internals given the dreaded budget.
