what is your old mortar beds lime or cement.

4 sand 1 cement. some lime if you wish 1 is plenty

If the beds are S&C keep it the same strength which will be hard to determine unless you can contact the brickie who built it through a medium just assume 6.1.1 if the beds are lime morter then the pointing should be the same, up to you.
