I'm sure an air entrainer will put air in the mix, plasticiser just cuts back water use which makes the mix stronger. Good idea also to add air to the mix, putting through a mixer helps.

Plastering sand aka washed sand , is washed to get rid of s**t in the sand like salt etc and yes you can use it on stone walls and after cured I surpose you can dab over it,I have seen it done!
