Imago for a finished floor how thick a concrete slab would you lay?.

It depends, but generally as @Builderboi said, 150mm.

You can go down to 120mm with (concrete not screed) fibres on a small area like a 15 square metre kitchen floor. If it's something like a posh home gym floor then you're better off taking it up to 200mm due to the risk of smacking weights down onto it and the need to bolt down equipment. It's also worth going to 175/200mm if it's a large area, or alternatively stick to 150mm and put some steel in it.
