Cream of Tartar in your mix to slow down the setting process. Does it work ?

i'll admit it, I opened this thread genuinely thinking you were asking about putting this in the mix:

I've heard if u put cif lemon ( the one u put on ur pancakes) in the mix just a few drops it will give u more time opposite to that if u put lime in the mix (not the little green fruit) this will speed up the process ie if doing a small job??
